Instructions

  1. Step 1: Peel and grate 2 large russet potatoes (about 1.5 lbs) using a box grater. Place in a clean kitchen towel and squeeze out all excess moisture.
  2. Step 2: In a medium bowl, combine the squeezed potatoes, 1/4 cup all-purpose flour, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until well incorporated.
  3. Step 3: Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering.
  4. Step 4: Using a tablespoon, scoop the potato mixture and form into small, compact balls (about 1 inch in diameter), then flatten slightly. Fry in hot oil for 3-4 minutes per side until golden brown and crispy.
  5. Step 5: While tots cook, whisk 1/2 cup Greek yogurt, 2 tbsp chopped fresh dill, and 1 tbsp lemon juice until smooth.
