Garlic-Ginger Baked Salmon with Asparagus

Ingredients
- 4 (6 oz each) salmon fillets
- 2 tbsp olive oil
- 2 cloves, minced garlic
- 1 tsp, grated fresh ginger
- 1/2 tsp lemon zest
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 bunch (8 oz), trimmed and cut into 2-inch pieces asparagus
Instructions
- Step 1: Preheat oven to 400°F. Place asparagus on a baking sheet, drizzle with 1 tbsp olive oil, and season with 1/4 tsp salt and 1/4 tsp black pepper; toss to coat.
- Step 2: Roast asparagus 12-15 minutes until crisp-tender.
- Step 3: In a small bowl, mix minced garlic, grated ginger, lemon zest, 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper to form a paste.
- Step 4: Rub paste evenly over salmon fillets.
- Step 5: Place salmon on asparagus, roast 12-15 minutes until salmon is opaque and flakes easily with a fork.
