Garlic-Herb Roasted Zucchini with Feta Crisps

  1. Step 1: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Step 2: Toss 2 medium sliced zucchini with 2 tbsp olive oil, 2 minced garlic cloves, 1/2 tsp dried oregano, 1/4 tsp sea salt, and 1/8 tsp black pepper.
  3. Step 3: Spread zucchini in a single layer on the prepared baking sheet.
  4. Step 4: Roast for 18-20 minutes, flipping halfway through, until edges are golden brown and tender when pierced with a fork.
  5. Step 5: Remove from oven and sprinkle 1/4 cup crumbled feta cheese evenly over the zucchini.
  6. Step 6: Return to oven for 2-3 minutes until feta begins to crisp slightly.
  7. Step 7: Let rest for 5 minutes before serving to allow flavors to meld.
