Garlic-Shrimp Stir-Fry with Snap Peas and Rice Noodles

Ingredients
- 8 oz, peeled and deveined shrimp
- 2 tbsp rice wine
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 2 cloves, minced garlic
- 1 cup, trimmed snap peas
- 2 oz, cooked and rinsed rice noodles
- 1/4 cup water
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp, chopped green onions
Instructions
- Step 1: Toss 8 oz shrimp with 2 tbsp rice wine, 1 tbsp soy sauce, and 1 tbsp cornstarch. Let sit for 5 minutes.
- Step 2: Heat 2 tbsp vegetable oil in a wok over medium-high heat. Add 2 minced garlic cloves and stir for 30 seconds until fragrant.
- Step 3: Add shrimp and cook for 2-3 minutes until pink and opaque. Add 1 cup snap peas and stir-fry for 2 minutes until crisp-tender.
- Step 4: Add cooked rice noodles, 1/4 cup water, 1 tbsp rice vinegar, and 1 tsp sesame oil. Toss until noodles are coated and heated through, about 1 minute. Sprinkle with 1 tbsp chopped green onions and serve immediately.
