Garlic-Thyme Beef Tenderloin with Pan Sauce

  1. Step 1: Preheat oven to 400°F (200°C). Pat 1.5 lbs beef tenderloin dry with paper towels, then season evenly with 1/2 tsp salt and 1/4 tsp black pepper.
  2. Step 2: Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering. Sear beef on all sides for 3 minutes per side until deep brown crust forms.
  3. Step 3: Add 4 minced garlic cloves and 1 tbsp fresh thyme to skillet, stirring for 1 minute until fragrant. Transfer skillet to oven and roast 15-18 minutes until internal temperature reaches 125°F (52°C) for medium-rare.
  4. Step 4: Remove beef from skillet, transfer to cutting board, and rest 10 minutes. Add 3 tbsp butter to skillet, swirl until melted, and pour over resting beef.
