Ginger-Infused Chicken Stir-Fry

Ingredients
- 450 g chicken breast
- 2 tbsp avocado oil
- 3 tbsp fresh ginger
- 4 cloves garlic
- 4 oz red bell pepper
- 3 oz broccoli florets
- 3 oz snap peas
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat avocado oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add chicken slices and cook for 5-6 minutes, stirring occasionally, until golden and cooked through; transfer to a plate.
- Step 3: Add minced ginger and garlic to the skillet, stir for 30 seconds until fragrant.
- Step 4: Add bell pepper, broccoli, and snap peas; stir-fry for 5-7 minutes until vegetables are crisp-tender.
- Step 5: Return chicken to the skillet, add salt and pepper, and toss to combine. Cook for 1 minute to heat through.
