- 4 medium, peeled pearl onions
- 1-inch piece, peeled and finely minced fresh ginger
- 4 cups, low-sodium chicken broth
- 1/4 cup, chopped fresh parsley
- 1 tbsp fresh lemon juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp coconut oil in a medium saucepan over medium heat until shimmering. Add 4 peeled pearl onions and 1-inch finely minced fresh ginger, and sauté for 5 minutes until onions are translucent and ginger is fragrant.
- Step 2: Pour in 4 cups low-sodium chicken broth, bring to a gentle simmer, and cook uncovered for 15 minutes to meld flavors.
- Step 3: Stir in 1/4 cup chopped fresh parsley, 1 tbsp fresh lemon juice, 1/2 tsp sea salt, and 1/4 tsp black pepper. Simmer for 2 more minutes, then serve hot.
