Ginger-Sesame Chicken Stir-Fry with Coconut Aminos

Ingredients
- 1 lb sliced into 1/4-inch thick strips chicken breast
- 2 tbsp coconut aminos
- 1 tsp sesame oil
- 1 tbsp grated fresh ginger
- 1 minced garlic
- 2 cups florets broccoli
- 1 medium julienned carrots
- 1/2 diced bell pepper
- 1 tbsp olive oil
- 1 tsp sesame seeds
Instructions
- Step 1: Heat 1 tbsp olive oil in a wok or large skillet over medium-high heat until shimmering (about 1 minute).
- Step 2: Add 1 lb sliced chicken breast strips and cook 3-4 minutes until browned and cooked through. Remove chicken from pan and set aside.
- Step 3: Add 1 tbsp grated ginger, 1 minced garlic clove, and 2 cups broccoli florets to the pan, stir-frying for 2 minutes until broccoli begins to soften.
- Step 4: Add 1/2 diced bell pepper and 1 medium julienned carrot, cook 2 more minutes until vegetables are crisp-tender.
- Step 5: Return chicken to pan, add 2 tbsp coconut aminos, 1 tsp sesame oil, and 1 tsp sesame seeds. Toss constantly for 1 minute until sauce thickens and coats everything.
