Ginger-Soy Glazed Salmon with Sesame and Bok Choy

Ingredients
- 4 (6 oz each) salmon fillets
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp, grated fresh ginger
- 1 clove, minced garlic
- 2 tbsp sesame oil
- 1 head, chopped bok choy
- 2 tbsp sesame seeds
Instructions
- Step 1: Whisk 3 tbsp soy sauce, 2 tbsp rice vinegar, 1 tbsp honey, 1 tbsp grated fresh ginger, and 1 minced garlic clove in a small bowl until combined.
- Step 2: Heat 2 tbsp sesame oil in a large skillet over medium-high heat. Place 4 salmon fillets skin-side down and cook for 4 minutes until golden brown.
- Step 3: Flip salmon and spoon half the sauce mixture over the top. Add 2 chopped bok choy stems and cook for 2 minutes.
- Step 4: Add 1 chopped bok choy head and remaining sauce, then cook for 3 minutes until bok choy is tender-crisp and salmon reaches 145°F internal temperature.
- Step 5: Garnish with 2 tbsp toasted sesame seeds before serving.
