Instructions
- Step 1: In a medium bowl, combine 1 cup diced zucchini, 1/2 cup diced yellow onion, 1/4 cup diced red bell pepper, 2 tbsp all-purpose flour, 1 large beaten egg, 1/4 cup chopped parsley, 1/4 tsp salt, and 1/8 tsp black pepper. Mix until evenly distributed.
- Step 2: Heat 2 tbsp olive oil in a large non-stick skillet over medium heat until shimmering.
- Step 3: Form the vegetable mixture into 4 equal patties using a 1/4-cup measure, then place in the skillet. Cook for 3-4 minutes per side until golden brown and crisp.
- Step 4: While fritters cook, whisk 1/2 cup plain Greek yogurt, 1 tbsp chopped dill, and 1 tsp lemon juice in a small bowl until smooth.
