Instructions
- Step 1: In a medium bowl, combine 3 tbsp olive oil, 2 tbsp lime juice, 1 tbsp chili powder, 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper to create the marinade. Add 4 boneless skinless chicken breasts and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes.
- Step 2: Preheat a grill or grill pan to medium-high heat (about 400°F). Remove the chicken from the marinade and grill for 6-7 minutes per side until internal temperature reaches 165°F and the chicken is nicely charred.
- Step 3: While the chicken grills, heat a large skillet over medium heat and add the sliced 1 large red bell pepper, 1 large green bell pepper, and 1 medium yellow onion. Sauté with a pinch of salt for 8-10 minutes until the vegetables are tender and slightly caramelized.
- Step 4: Remove the chicken from the grill and let rest for 5 minutes. Slice into strips and serve over the sautéed peppers and onions. Garnish with 2 tbsp chopped fresh cilantro before serving.
