Grilled Tomato and Pepper Skewers with Lemon
Simple skewers of sun-ripened tomatoes and bell peppers, grilled to perfection and finished with bright lemon and fresh herbs.

Ingredients
- 500g tomatoes
- 300g bell peppers
- 2 tbsp olive oil
- 1 lemon
- 2 cloves garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh basil
Instructions
- Step 1: Preheat grill to medium-high (375°F/190°C). Cut 500g tomatoes into halves and 300g bell peppers into 1-inch chunks.
- Step 2: Whisk 2 tbsp olive oil, 1 tbsp lemon juice, 2 minced garlic cloves, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl.
- Step 3: Thread tomatoes and peppers onto skewers, drizzle with marinade, and let sit 10 minutes.
- Step 4: Grill skewers 8-10 minutes, turning occasionally, until vegetables are tender and slightly charred.
- Step 5: Remove from grill, sprinkle with 1 tsp lemon zest and 1 tbsp chopped fresh basil. Serve immediately.
