Hatch Pepper and Corn Salad with Lime Vinaigrette

Ingredients
- 4 medium, roasted and chopped Hatch peppers
- 1 cup, fresh or frozen and thawed corn
- 1/4 cup, finely diced red onion
- 2, juiced lime
- 3 tbsp olive oil
- 1/2 tsp cumin
- 1/4 tsp salt
- 2 tbsp, chopped cilantro
Instructions
- Step 1: Toss 4 medium roasted and chopped Hatch peppers, 1 cup corn, and 1/4 cup finely diced red onion in a bowl. In a small bowl, whisk together 2 juiced limes, 3 tbsp olive oil, 1/2 tsp cumin, and 1/4 tsp salt to make the vinaigrette.
- Step 2: Pour the vinaigrette over the salad and toss gently to coat. Sprinkle with 2 tbsp chopped cilantro and serve immediately.
