  2. Step 2: Add potatoes, green beans, and cabbage, stirring for 2 minutes. Pour in 4 cups vegetable broth, add bay leaf, 1 tsp dried thyme, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a simmer, cover, and cook for 20 minutes until vegetables are tender.
  3. Step 3: While soup simmers, make dumplings: Whisk flour, baking powder, and 1/4 tsp salt in a bowl. Cut in cold butter until crumbly, then stir in cold water and 1 tsp fresh dill until a dough forms.
  4. Step 4: Divide dough into 8 pieces, roll each into a ball, and drop into the simmering soup. Cover and cook for 8 minutes. Discard bay leaf, adjust seasoning, and serve topped with fresh parsley.
