Hearty Seasonal Vegetable Soup with Herb Dumplings

- 1 tbsp olive oil
- 1 medium, diced onion
- 2, diced carrots
- 2 stalks, diced celery
- 1 cup, chopped potatoes
- 1 cup, chopped green beans
- 1 cup, chopped cabbage
- 4 cups vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking for 5 minutes until softened.
- Step 2: Add potatoes, green beans, and cabbage, stirring for 2 minutes. Pour in 4 cups vegetable broth, add bay leaf, 1 tsp dried thyme, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a simmer, cover, and cook for 20 minutes until vegetables are tender.
- Step 3: While soup simmers, make dumplings: Whisk flour, baking powder, and 1/4 tsp salt in a bowl. Cut in cold butter until crumbly, then stir in cold water and 1 tsp fresh dill until a dough forms.
- Step 4: Divide dough into 8 pieces, roll each into a ball, and drop into the simmering soup. Cover and cook for 8 minutes. Discard bay leaf, adjust seasoning, and serve topped with fresh parsley.
