Herb-Baked Chicken Thighs with Garlic

- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary
- 1 tablespoon fresh thyme
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chicken broth
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Step 2: In a small bowl, combine 2 tablespoons olive oil, 1 tablespoon chopped rosemary, 1 tablespoon chopped thyme, and 2 minced garlic cloves.
- Step 3: Rub the herb mixture evenly over both sides of the chicken thighs.
- Step 4: Place thighs skin-side up in a baking dish and pour 2 tablespoons chicken broth around the chicken.
- Step 5: Bake for 35-40 minutes until skin is golden brown and internal temperature reaches 165°F (74°C).
