Herb-Infused Beef Tenderloin with Rosemary Butter

Ingredients
- 1.5 lbs beef tenderloin
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp butter
- 1 tbsp fresh, finely chopped rosemary
- 1 tbsp fresh, finely chopped thyme
- 2 cloves, minced garlic
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat 1.5 lbs beef tenderloin dry, then season with 1 tsp salt and 1/2 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering, then sear beef on all sides for 2-3 minutes per side until golden brown.
- Step 3: Transfer skillet to oven and roast for 15-18 minutes until internal temperature reaches 125°F (52°C) for medium-rare.
- Step 4: Remove beef from skillet, tent loosely with foil, and let rest 10 minutes.
- Step 5: While beef rests, melt 2 tbsp butter in skillet over medium heat, then add 1 tbsp fresh rosemary, 1 tbsp fresh thyme, and 2 minced garlic cloves, sautéing for 1 minute until fragrant.
- Step 6: Slice rested beef and drizzle with herb butter before serving.
