Herb-Infused Ground Beef Meatloaf with Tomato Glaze

Ingredients
- 1 lb ground beef
- 1 medium carrot
- 1/4 cup onion
- 2 tbsp fresh parsley
- 1 clove garlic
- 2 tbsp tomato paste
- 1 tbsp apple cider vinegar
Instructions
- Step 1: Preheat oven to 375°F (190°C). Finely grate 1 medium carrot and finely dice 1/4 cup onion. Pulse 1 clove garlic in a food processor until minced, then add to the carrot and onion mixture.
- Step 2: In a large bowl, combine 1 lb ground beef, grated carrot-onion mixture, 2 tbsp chopped fresh parsley, and 2 tbsp tomato paste. Mix gently with hands until just combined—do not overmix.
- Step 3: Press the mixture into a greased loaf pan (8x4 inches) and smooth the top with a spatula. Bake for 35 minutes until the internal temperature reaches 160°F (71°C) and the surface is lightly browned.
- Step 4: While meatloaf bakes, whisk 1 tbsp apple cider vinegar with 2 tbsp tomato paste to make a glaze. After 35 minutes, brush the glaze over the top of the meatloaf and bake for 5 more minutes until glaze is set and shiny.
