Cauliflower Rice Stir-Fry with Ground Beef and Broccoli

- 12 oz ground beef
- 3 cups cauliflower rice
- 2 cups broccoli florets
- 1/2 cup diced onion
- 2 cloves minced garlic
- 2 tbsp avocado oil
- 3 tbsp coconut aminos
- 1 tsp grated ginger
- 1/4 tsp red pepper flakes
Instructions
- Step 1: Heat 1 tbsp avocado oil in a large skillet over medium-high heat until shimmering. Add ground beef, breaking it into small crumbles with a spatula, and cook for 5-6 minutes until no longer pink, then transfer to a plate.
- Step 2: Add remaining 1 tbsp avocado oil to the skillet. Sauté diced onion for 2 minutes until translucent, then add minced garlic and grated ginger, cooking for 30 seconds until fragrant.
- Step 3: Return cooked ground beef to the skillet, add broccoli florets, coconut aminos, and red pepper flakes. Stir-fry for 4-5 minutes until broccoli is tender-crisp and sauce thickens slightly.
- Step 4: Stir in 3 cups cauliflower rice and cook for 3 minutes, stirring occasionally, until heated through and rice is tender.
