Herb-Infused Tomato Soup with Blended Basil

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 medium diced onion, 2 minced garlic cloves, 2 diced carrots, and 2 diced celery stalks. Cook for 8-10 minutes until vegetables are tender and onion is translucent.
  2. Step 2: Stir in 2 tbsp tomato paste and cook for 2 minutes, stirring constantly to avoid burning.
  3. Step 3: Add 4 cups vegetable broth and 2 cups crushed tomatoes, then bring to a simmer. Cook for 20 minutes to meld flavors.
  4. Step 4: Remove from heat and let cool slightly. Blend the soup until smooth using an immersion blender, or transfer to a blender in batches.
  5. Step 5: Return the soup to the pot. Stir in 1/4 cup chopped fresh basil, 1/4 cup chopped fresh parsley, and 1 tbsp fresh thyme leaves. Season with salt and pepper to taste.
  6. Step 6: Stir in 1 cup heavy cream and heat gently for 5 minutes over low heat (do not boil) until the soup is hot but not bubbling.
