Herb-Roasted Beef Meatloaf with Tomato Glaze

Ingredients
- 1.5 lbs ground beef
- 1/2 cup breadcrumbs
- 1/2 cup, finely diced onion
- 2 cloves, minced garlic
- 1 large egg
- 2 tbsp, chopped fresh parsley
- 1 tsp fresh thyme leaves
- 1 tbsp Worcestershire sauce
- 1/4 cup tomato sauce
- 1 tbsp brown sugar
- 1 tsp apple cider vinegar
Instructions
- Step 1: Preheat oven to 375°F. In a large bowl, combine 1.5 pounds ground beef, 1/2 cup breadcrumbs, 1/2 cup finely diced onion, 2 minced garlic cloves, 1 large egg, 2 tablespoons chopped fresh parsley, 1 teaspoon fresh thyme leaves, and 1 tablespoon Worcestershire sauce. Mix gently until combined.
- Step 2: Transfer the mixture to a greased loaf pan and shape into a loaf. In a small bowl, whisk together 1/4 cup tomato sauce, 1 tablespoon brown sugar, and 1 teaspoon apple cider vinegar to make the glaze.
- Step 3: Spread the glaze evenly over the top of the meatloaf. Bake for 50-60 minutes, or until the internal temperature reaches 160°F.
