  1. Step 1: Place 2 lbs cubed red potatoes in a large pot, cover with cold water, and bring to a boil. Cook for 15 minutes until fork-tender. Drain and cool completely.
  2. Step 2: In a bowl, whisk together 3 tbsp chopped chives, 2 tbsp fresh dill, 1/2 cup mayonnaise, 1 tbsp apple cider vinegar, 2 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper until smooth.
  3. Step 3: Gently fold 1 stalk diced celery into the cooled potatoes, then add 1/2 cup of the chive vinaigrette. Toss until potatoes are evenly coated.
  4. Step 4: Refrigerate for at least 2 hours to allow flavors to meld. Before serving, add another 1/4 cup vinaigrette if needed to moisten, then garnish with extra chives.
