Hidden Ginger Glazed Salmon with Snap Peas

Ingredients
- 4 (6 oz each), skin-on salmon fillets
- 1.5 tbsp, finely grated fresh ginger
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp sesame oil
- 1 cup, trimmed snap peas
- 2 cloves, minced garlic
- 1 tsp rice vinegar
- 1 tsp cornstarch
Instructions
- Step 1: Whisk together 1.5 tbsp grated ginger, 2 tbsp soy sauce, 1 tbsp honey, 1 tsp sesame oil, and 1 tsp rice vinegar in a small bowl. Set aside.
- Step 2: Heat 1 tsp sesame oil in a non-stick skillet over medium-high heat. Place 4 salmon fillets skin-side down and cook for 4 minutes until skin is crisp.
- Step 3: Flip salmon and spoon half the ginger glaze over the top. Cook for 5 minutes, basting occasionally with the remaining glaze, until salmon is opaque and flakes easily.
- Step 4: Remove salmon from pan. Add 1 cup trimmed snap peas and 2 minced garlic cloves to the skillet. Sauté for 2 minutes until peas are bright green and tender-crisp.
- Step 5: Stir 1 tsp cornstarch into the pan juices, then add the reserved glaze. Cook for 1 minute until thickened and glossy. Pour over salmon and serve immediately.
