Honey-Ginger Chicken Thighs with Scallion Finish

- 1.5 lbs chicken thighs
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp ginger
- 4 scallions
- 1 tbsp vegetable oil

Instructions
- Step 1: Pat 1.5 lbs bone-in, skin-on chicken thighs dry with paper towels and season both sides with salt and black pepper.
- Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and cook for 6-7 minutes until skin is golden brown and crispy, then flip and cook for 4-5 minutes until internal temperature reaches 165°F.
- Step 3: Whisk together 3 tbsp honey, 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tbsp minced ginger in a small bowl.
- Step 4: Pour honey mixture over chicken, add 2 sliced scallion whites, and cook for 2-3 minutes, stirring occasionally, until sauce thickens and coats chicken evenly.
- Step 5: Garnish with 2 sliced scallion greens and serve immediately.
