Honey-Glazed Carrot and Apple Salad with Walnuts

Ingredients
- 1 lb, peeled and sliced into 1/4-inch rounds carrots
- 2 tbsp olive oil
- 3 tbsp honey
- 2, tart variety like Granny Smith, thinly sliced apple
- 1/2 cup, roughly chopped walnuts
- 5 oz, fresh mixed greens
- 1 tbsp balsamic vinegar
- 1 tsp lemon juice
- 1/4 tsp salt
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss 1 lb sliced carrots with 2 tbsp olive oil, 1/4 tsp salt, and spread on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized, stirring once halfway.
- Step 2: While carrots roast, whisk together 3 tbsp honey, 1 tbsp balsamic vinegar, 1 tsp lemon juice, and a pinch of salt to make the dressing.
- Step 3: In a large bowl, combine 5 oz mixed greens, 2 thinly sliced apples, and roasted carrots. Drizzle with 2 tbsp dressing and toss gently until evenly coated.
- Step 4: Top salad with 1/2 cup chopped walnuts and drizzle remaining dressing over the top before serving immediately.
