Honey-Glazed Carrots with Dill and Lemon

- 16 oz (peeled, 1/2-inch thick coins) carrots
- 2 tbsp honey
- 1/2 (zested and juiced) lemon
- 1 tbsp (fresh, chopped) dill
- 1 tbsp olive oil
- 1/4 tsp salt
Instructions
- Step 1: Preheat oven to 425°F. Toss carrots with olive oil, salt, lemon zest, and 1 tbsp honey in a bowl until evenly coated.
- Step 2: Spread carrots in a single layer on a parchment-lined baking sheet. Roast for 20 minutes, stirring once after 10 minutes.
- Step 3: Remove from oven and drizzle with remaining honey, lemon juice, and dill. Toss gently to coat. Return to oven for 5 more minutes until carrots are tender and glaze is bubbling.
- Step 4: Transfer to a serving dish immediately to prevent overcooking.
