Kombucha-Glazed Salmon with Lemon Dill

  1. Step 1: Pat salmon dry and season both sides with 1/4 tsp salt and 1/8 tsp black pepper. Heat olive oil in a skillet over medium-high heat until shimmering.
  2. Step 2: Place salmon skin-side down in skillet and cook for 4 minutes without moving until skin is crisp. Flip and cook 3 minutes more until fish flakes easily with a fork.
  3. Step 3: Reduce heat to low and add kombucha, lemon juice, minced garlic, and 1 tbsp dill to skillet. Simmer gently for 2 minutes until sauce reduces by half and becomes glossy, basting salmon occasionally.
  4. Step 4: Remove from heat, garnish with remaining dill, and serve immediately with extra lemon wedges.
