Kombucha-Glazed Salmon with Lemon Dill

Ingredients
- 4 (6 oz each), skin-on salmon fillets
- 1/4 cup, unsweetened kombucha
- 2 tbsp lemon juice
- 2 tbsp, chopped fresh dill
- 1 tbsp olive oil
- 1 clove, minced garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat salmon dry and season both sides with 1/4 tsp salt and 1/8 tsp black pepper. Heat olive oil in a skillet over medium-high heat until shimmering.
- Step 2: Place salmon skin-side down in skillet and cook for 4 minutes without moving until skin is crisp. Flip and cook 3 minutes more until fish flakes easily with a fork.
- Step 3: Reduce heat to low and add kombucha, lemon juice, minced garlic, and 1 tbsp dill to skillet. Simmer gently for 2 minutes until sauce reduces by half and becomes glossy, basting salmon occasionally.
- Step 4: Remove from heat, garnish with remaining dill, and serve immediately with extra lemon wedges.
