- 2 cups chicken
- 1/2 cup lemon-dill hummus
- 1/4 cup cucumber
- 1/4 cup red bell pepper
- 2 tbsp fresh dill
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
- 4 cups mixed greens
- 1/2 cup cherry tomatoes
- 4 slices whole wheat bread
Instructions
- Step 1: In a bowl, combine 2 cups shredded chicken, 1/4 cup diced cucumber, 1/4 cup diced red bell pepper, 2 tbsp fresh dill, 1 tbsp lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper. Mix until well combined.
- Step 2: Spread 1/2 cup lemon-dill hummus evenly across the bottom of a serving plate.
- Step 3: Arrange 4 cups mixed greens over the hummus layer.
