Ingredients
- 4 (6 oz each) salmon fillets
- 2 tbsp olive oil
- 1 lemon
- 2 tbsp fresh dill
- 12 oz asparagus
- 2 cloves garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels, then season both sides with 1/4 tsp sea salt and 1/8 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering. Place salmon skin-side down and sear for 3 minutes until golden brown, then flip and cook 2 minutes more.
- Step 3: Add asparagus and 1 minced garlic clove to the skillet, drizzle with remaining 1 tbsp olive oil, and toss to coat. Roast in oven for 12-15 minutes until asparagus is tender and salmon reaches 125°F (52°C).
- Step 4: Squeeze juice from half the lemon over salmon, then sprinkle with 1 tbsp chopped dill and remaining garlic. Garnish with remaining dill and lemon zest before serving.
