Lemon-Dill Shrimp Salad with Watercress and Radishes

Ingredients
- 12 oz, peeled and deveined shrimp
- 1 tbsp avocado oil
- 1.5 tbsp lemon juice
- 1 tbsp, chopped fresh dill
- 2 cups watercress
- 1 cup, thinly sliced radishes
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp avocado oil in a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque.
- Step 2: Remove shrimp from skillet. In a small bowl, whisk together 1.5 tbsp lemon juice, 1 tbsp chopped dill, 1/4 tsp sea salt, and 1/4 tsp black pepper to make dressing.
- Step 3: Toss watercress and sliced radishes in a large bowl. Add cooked shrimp and drizzle with dressing, gently mixing to coat.
- Step 4: Serve immediately, ensuring each bite includes the peppery greens and crisp radishes.
