Lemon-Glazed Chicken with Thyme

  1. Step 1: Season 2 chicken breasts with 1/2 tsp salt and 1/4 tsp black pepper on both sides.
  2. Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook for 5 minutes per side until golden and cooked through (internal temperature 165°F).
  3. Step 3: Remove chicken and set aside. Add 2 tbsp unsalted butter to skillet, swirling to melt.
  4. Step 4: Add 1 lemon zested and 2 tbsp lemon juice, 1 tbsp fresh thyme, and 1/4 cup chicken broth to skillet. Simmer for 2 minutes until sauce reduces and thickens.
  5. Step 5: Return chicken to skillet, spooning sauce over top. Cook for 1 minute to reheat and absorb flavors.
  6. Step 6: Slice chicken and serve with sauce spooned over the top.
