  1. Step 1: In a large bowl, combine 1 cup corn kernels, 4 slices cooked and crumbled bacon, 1/2 cup all-purpose flour, 1 tsp baking powder, 1/2 tsp salt, and 1/4 tsp black pepper. Make a well in the center and add 1 beaten egg and 1/4 cup milk. Stir gently until just combined, avoiding overmixing.
  2. Step 2: Melt 2 tbsp butter in a non-stick skillet over medium heat until shimmering and bubbling.
  3. Step 3: Drop 1/4 cup of the batter per fritter into the skillet, flattening slightly with a spatula. Cook for 3 minutes on first side until golden brown and crispy.
  4. Step 4: Flip fritters and cook for 3 more minutes on the second side until golden brown and cooked through.
  5. Step 5: Transfer fritters to a paper towel-lined plate to drain excess oil. Drizzle with 1 tbsp maple syrup just before serving.
