Maple-Glazed Carrot and Sweet Potato Fries

  1. Step 1: Preheat oven to 425°F. In a large bowl, toss 2 lbs peeled carrot sticks and 2 lbs peeled sweet potato sticks with 3 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp cinnamon until evenly coated.
  2. Step 2: Spread vegetables in a single layer on a parchment-lined baking sheet. Bake for 20 minutes, flipping halfway, until edges are golden and crisp.
  3. Step 3: Remove from oven and drizzle with 1 tbsp pure maple syrup. Toss gently to coat. Return to oven for 3 minutes to caramelize the syrup.
