Maple-Glazed Sweet Potato Hash with Onions

- 2 cups, diced into 1/2-inch cubes sweet potatoes
- 1 medium, finely diced yellow onion
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp, finely chopped fresh thyme
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium heat. Add diced sweet potatoes and 1/2 tsp sea salt, then cook for 8 minutes, stirring occasionally, until potatoes begin to soften and brown at the edges.
- Step 2: Add finely diced yellow onion and cook for 5 more minutes until onions are translucent and sweet potatoes are fork-tender.
- Step 3: Stir in 1 tbsp maple syrup, 1/4 tsp black pepper, and 1 tsp chopped thyme. Cook for 2 minutes more until syrup coats the potatoes evenly and caramelizes slightly.
