- 2 tbsp, chopped fresh parsley
Instructions
- Step 1: Preheat oven to 400°F. Toss 2 lbs cubed sweet potatoes with 2 tbsp olive oil, 3 tbsp pure maple syrup, 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper until evenly coated.
- Step 2: Spread sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Step 3: Roast for 25-30 minutes, stirring once halfway through, until potatoes are tender and caramelized at the edges.
