Miso-Caramelized Sweet Potato Noodles

  1. Step 1: In a small bowl, whisk together 2 tbsp white miso paste, 1 tbsp maple syrup, 1 tsp rice vinegar, and 1 tsp sesame oil until smooth.
  2. Step 2: Heat a large skillet over medium-high heat. Add 1 cup chopped bok choy and 1 minced garlic clove, cooking for 2 minutes until bok choy wilts slightly.
  3. Step 3: Add 2 medium spiralized sweet potatoes to the skillet and toss to coat. Cook for 4-5 minutes until sweet potatoes are tender-crisp.
  4. Step 4: Pour the miso glaze over the sweet potatoes and toss to coat evenly. Cook for 1 minute until the glaze thickens slightly and coats the noodles.
  5. Step 5: Remove from heat and sprinkle with 1 tbsp toasted sesame seeds. Serve immediately.
