Miso-Crisped Tofu with Sesame-Ginger Veggies

Ingredients
- 8 oz firm tofu
- 1 tbsp white miso paste
- 1 tsp rice vinegar
- 1/2 tbsp sesame oil
- 1 cup broccoli
- 1/2 cup snow peas
- 1 tbsp ginger
- 2 cloves garlic
- 1 tbsp soy sauce
- 1 tsp sesame seeds
Instructions
- Step 1: Press 8 oz firm tofu for 15 minutes to remove excess water, then cut into 1/2-inch cubes. In a small bowl, whisk together 1 tbsp white miso paste, 1 tsp rice vinegar, and 1/2 tbsp sesame oil until smooth.
- Step 2: Heat a nonstick skillet over medium-high heat. Add tofu cubes and cook for 4 minutes per side until golden brown and crisp. Remove tofu and set aside.
- Step 3: Add 1/2 tbsp sesame oil to the skillet, then add 1/2 cup chopped broccoli, 1/2 cup snow peas, 1 tbsp minced ginger, and 2 minced garlic cloves. Sauté for 4 minutes until vegetables are vibrant green and tender-crisp. Stir in 1 tbsp soy sauce, then return tofu to the skillet. Toss gently to coat tofu in the sauce, then cook for 2 more minutes. Sprinkle with 1 tsp sesame seeds and serve immediately.
