Miso-Glazed Carrot and Edamame Bowls
Sweet roasted carrots and protein-packed edamame glazed in savory-sweet miso sauce, served over brown rice.

Ingredients
- 300g, julienned carrots
- 120g shelled, thawed edamame
- 200g cooked brown rice
- 1 tbsp white miso paste
- 1 tsp rice vinegar
- 1/2 tbsp maple syrup
- 1/2 tsp sesame oil
- 1 tbsp toasted sesame seeds
Instructions
- Step 1: Toss julienned carrots with 1/2 tsp sesame oil and spread on a baking sheet. Roast at 400°F (200°C) for 20 minutes until tender and slightly caramelized.
- Step 2: Whisk miso paste, rice vinegar, maple syrup, and 1 tsp water in a small bowl until smooth. Heat 1/2 tsp sesame oil in a skillet over medium heat.
- Step 3: Add thawed edamame to skillet and cook for 2 minutes. Stir in miso glaze and cook for 1 minute until glossy and coating edamame evenly.
- Step 4: Divide cooked brown rice between bowls, top with roasted carrots and edamame, and drizzle with any remaining glaze. Sprinkle with toasted sesame seeds.
