Miso-Glazed Salmon with Rice and Steamed Greens

Ingredients
- 4 (6 oz each) salmon fillets
- 3 tbsp white miso paste
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 cup short-grain rice
- 1 1/4 cups water
- 1 bunch (8 oz) bok choy
- 1 tsp sesame oil
- 1 tbsp sesame seeds
Instructions
- Step 1: Rinse 1 cup short-grain rice under cold water until water runs clear; combine with 1 1/4 cups water in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 18 minutes until water is absorbed; let sit covered for 5 minutes.
- Step 2: Whisk 3 tbsp white miso paste, 1 tbsp rice vinegar, and 1 tsp sugar in a bowl until smooth. Place 4 salmon fillets skin-side down on a parchment-lined baking sheet.
- Step 3: Brush miso mixture evenly over salmon, then bake at 400°F for 12-15 minutes until edges are golden and salmon flakes easily.
- Step 4: While salmon bakes, steam 1 bunch bok choy (8 oz) for 4 minutes until bright green. Drizzle with 1 tsp sesame oil and sprinkle with 1 tbsp sesame seeds before serving with rice.
