Miso-Glazed Tofu Donburi
Silken tofu glazed with miso and mirin, served over steamed rice with a side of pickled vegetables.

Ingredients
- 14 ounces Firm tofu
- 2 tablespoons White miso paste
- 1 tablespoon Mirin
- 1 teaspoon Rice vinegar
- 1 teaspoon Soy sauce
- 1/2 teaspoon Sesame oil
- 4 cups Steamed rice
- 2 Green onions
- 1 teaspoon Sesame seeds
Instructions
- Step 1: Press 14 ounces firm tofu for 15 minutes to remove excess moisture.
- Step 2: In a small bowl, mix 2 tablespoons white miso paste, 1 tablespoon mirin, 1 teaspoon rice vinegar, 1 teaspoon soy sauce, and 1/2 teaspoon sesame oil until smooth.
- Step 3: Slice the pressed tofu into 1/2-inch thick pieces and brush with the miso glaze.
- Step 4: Heat a skillet over medium-high heat and cook the tofu for 3-4 minutes per side until golden and caramelized.
- Step 5: Divide 4 cups steamed rice between bowls, top with glazed tofu, and sprinkle with 2 sliced green onions and 1 teaspoon sesame seeds.
