Miso-Glazed Tofu with Bok Choy and Shiitake

  1. Step 1: Whisk miso paste, apple cider vinegar, sesame oil, minced garlic, and grated ginger until smooth. Set aside.
  2. Step 2: Heat a nonstick skillet over medium-high heat. Add tofu cubes and sear for 3-4 minutes per side until golden brown.
  3. Step 3: Add mushrooms and bok choy to skillet, stirring to coat with oil. Pour miso glaze over vegetables and tofu.
  4. Step 4: Reduce heat to low, cover, and simmer for 5-6 minutes until bok choy is tender and sauce has thickened slightly. Serve immediately with extra sauce drizzled on top.
