Miso-Glazed Tofu with Roasted Broccoli and Sesame Rice

Ingredients
- 14 oz, pressed and cut into 1-inch cubes firm tofu
- 2 tbsp white miso paste
- 1 tbsp maple syrup
- 1 cup, cooked rice
- 1.5 lb, cut into florets broccoli
- 1 tsp sesame oil
- 1 tbsp toasted sesame seeds
- 1 tsp soy sauce
- 2 cloves, minced garlic
- 1 tsp, grated ginger
Instructions
- Step 1: Preheat oven to 400°F. Toss broccoli florets with 1 tsp sesame oil and a pinch of salt; spread on a baking sheet and roast for 15-18 minutes until edges are crispy.
- Step 2: Whisk miso paste, maple syrup, soy sauce, garlic, and ginger in a bowl until smooth. Brush half the mixture over tofu cubes.
- Step 3: Place tofu on a parchment-lined baking sheet and brush with remaining glaze. Roast for 15-18 minutes until golden and slightly crisp. Serve tofu and broccoli over rice, sprinkled with sesame seeds.
