Miso-Tofu Stir-Fry with Bok Choy

Ingredients
- 14 oz, pressed and cubed firm tofu
- 4 cups, chopped bok choy
- 2 tbsp soy sauce
- 1 tbsp white miso paste
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sugar
- 2 cloves, minced garlic
- 1 tbsp vegetable oil
- 1/4 cup water
Instructions
- Step 1: In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp white miso paste, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp sugar, and 1/4 cup water until smooth.
- Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat, then add 2 minced garlic cloves and stir for 30 seconds until fragrant.
- Step 3: Add 14 oz cubed tofu and stir-fry for 3-4 minutes until lightly golden on all sides.
- Step 4: Add 4 cups chopped bok choy and the miso sauce mixture; toss to coat and cook for 4-5 minutes until bok choy is tender but still crisp.
