Miso-Tofu Stir-Fry with Bok Choy

  1. Step 1: In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp white miso paste, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp sugar, and 1/4 cup water until smooth.
  2. Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat, then add 2 minced garlic cloves and stir for 30 seconds until fragrant.
  3. Step 3: Add 14 oz cubed tofu and stir-fry for 3-4 minutes until lightly golden on all sides.
  4. Step 4: Add 4 cups chopped bok choy and the miso sauce mixture; toss to coat and cook for 4-5 minutes until bok choy is tender but still crisp.
