Molasses-Basted Baked Beans with Smoked Pork

Ingredients
- 2 cups navy beans
- 4 cups water
- 1 large yellow onion
- 2 stalks celery
- 2 carrots
- 1/4 cup molasses
- 1/4 cup brown sugar
- 2 tbsp apple cider vinegar
- 1 tsp mustard powder
- 1/2 lb smoked pork shoulder
- 1 bay leaf
- 1/2 tsp black pepper
Instructions
- Step 1: In a large pot, combine 2 cups dried navy beans, 4 cups water, 1 large yellow onion chopped, 2 celery stalks chopped, and 2 carrots chopped. Bring to a boil, then reduce heat to low and simmer for 1 hour until beans are tender.
- Step 2: Add 1/4 cup molasses, 1/4 cup brown sugar, 2 tbsp apple cider vinegar, 1 tsp mustard powder, 1/2 lb smoked pork shoulder diced, 1 bay leaf, 1/2 tsp black pepper, and salt to taste. Stir well.
- Step 3: Cover and simmer on low heat for 1.5 hours, stirring occasionally, until sauce thickens and coats beans.
- Step 4: Remove bay leaf, adjust seasoning, and simmer uncovered for 10 minutes more if needed.
