Instructions
- Step 1: Preheat oven to 425°F. In a small bowl, mix 2 tbsp chopped fresh rosemary, 2 tbsp chopped fresh thyme, 4 minced garlic cloves, 1 tbsp lemon zest, 3 tbsp olive oil, 2 tsp salt, and 1 tsp black pepper to form a herb rub.
- Step 2: Pat dry 1 whole (4 lbs) chicken with paper towels. Rub the herb mixture all over the chicken skin, under the skin where possible, and inside the cavity for full flavor.
- Step 3: In a large roasting pan, toss 4 chopped carrots, 4 quartered red potatoes, 3 chopped parsnips, and 1 large onion cut into wedges with 1 tbsp olive oil and a pinch of salt and pepper. Spread evenly.
- Step 4: Place the chicken breast-side up on top of the vegetables. Roast in the oven for 1 hour and 15 minutes, or until an internal thermometer reads 165°F in the thickest part of the thigh.
- Step 5: Let the chicken rest for 10 minutes before carving. Serve with the roasted vegetables spooned with pan juices.
