Instructions
- Step 1: Preheat oven to 425°F. In a small bowl, mix 3 tbsp olive oil with 2 tbsp chopped fresh rosemary, 2 tbsp chopped fresh thyme, 4 minced garlic cloves, 1 1/2 tsp salt, and 1 tsp black pepper to form an herb rub.
- Step 2: Pat dry 1 whole 4-lb chicken with paper towels. Rub the herb mixture all over the chicken skin and inside the cavity. Stuff the cavity with 1 halved lemon for added aromatic moisture.
- Step 3: Place 3 peeled and cut carrots, 2 peeled and cut parsnips, and 4 quartered small red potatoes in a large roasting pan. Drizzle vegetables with a little olive oil and toss to coat, seasoning lightly with salt and pepper.
- Step 4: Position the chicken on top of the vegetables breast-side up. Roast for 1 hour 15 minutes, or until the internal temperature reaches 165°F and the skin is golden and crispy. Let rest for 10 minutes before carving and serving alongside the roasted root vegetables.
