One-Pan Lemon-Garlic Shrimp and Asparagus Pasta

Ingredients
- 8 oz spaghetti
- 1 tbsp olive oil
- 1/2 cup cherry tomatoes
- 1/2 lb shrimp
- 1/2 cup asparagus
- 2 cloves, minced garlic
- 1/2 tsp red pepper flakes
- 1/4 cup, grated Parmesan cheese
- 1 tbsp lemon juice
- 1/4 cup, reserved pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil, add 8 oz spaghetti, and cook for 8 minutes until al dente; drain and reserve 1/4 cup pasta water.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat, add 1/2 lb shrimp and 1/2 cup cherry tomatoes, season with salt and pepper, and cook for 2 minutes until shrimp turn pink and opaque; remove and set aside.
- Step 3: Add 1/2 cup asparagus, 2 cloves minced garlic, and 1/2 tsp red pepper flakes to the skillet; sauté for 3 minutes until asparagus is tender-crisp and garlic is fragrant.
- Step 4: Return shrimp and tomatoes to the skillet, add drained spaghetti, 1 tbsp lemon juice, and 1/4 cup reserved pasta water; toss vigorously for 1 minute until sauce thickens and coats pasta.
- Step 5: Stir in 1/4 cup grated Parmesan cheese until melted, adjust seasoning with salt and pepper, and serve immediately.
