One-Pot Chicken and Rice with Carrots and Peas

Ingredients
- 1.5 lbs chicken breasts
- 2 tbsp olive oil
- 1 large onion
- 2 carrots
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tsp dried thyme
- 1 cup frozen peas
- to taste salt
- to taste black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium-high heat. Add 1.5 lbs diced chicken breasts and cook for 5 minutes until golden brown on all sides.
- Step 2: Add 1 diced large onion and 2 diced carrots to the pot. Cook for 5 minutes until vegetables begin to soften.
- Step 3: Stir in 1 cup long-grain rice, 2 cups chicken broth, 1 tsp dried thyme, and salt and pepper to taste.
- Step 4: Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until rice is tender and liquid is absorbed.
- Step 5: Stir in 1 cup frozen peas and cook for 2 more minutes until peas are heated through.
