One-Pot Pasta with Lemon and Fresh Herbs

- 8 oz pasta
- 2 tbsp olive oil
- 2 cloves garlic
- 1 lemon
- 1/4 cup fresh basil
- 2 tbsp fresh parsley
- 1.5 cups vegetable broth
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil, add 8 oz pasta, and cook for 8 minutes until al dente.
- Step 2: While pasta cooks, heat 2 tbsp olive oil in a skillet over medium heat, then add 2 minced garlic cloves and sauté for 1 minute until fragrant.
- Step 3: Zest 1 lemon, then squeeze 2 tbsp juice into the skillet with the garlic.
- Step 4: Add 1/4 cup fresh basil, 2 tbsp fresh parsley, 1.5 cups vegetable broth, 0.5 tsp salt, and 0.25 tsp black pepper to the skillet, stirring to combine.
- Step 5: Drain the pasta, reserving 1/2 cup cooking water, then add the pasta to the skillet, tossing to coat and simmer for 2 minutes until sauce thickens.
- Step 6: Adjust consistency with reserved pasta water as needed, then divide into bowls and garnish with lemon zest.
