One-Pot Smoky Tomato and Black Bean Stew

Ingredients
- 1 tbsp olive oil
- 1 medium, finely chopped onion
- 2 cloves, minced garlic
- 1, diced red bell pepper
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz), drained and rinsed black beans
- 1 cup vegetable broth
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1 cup, drained corn kernels
- 2 cups, chopped kale
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1 medium onion finely chopped and 2 garlic cloves minced, and cook for 3-4 minutes until onion is translucent and garlic is fragrant.
- Step 2: Stir in 1 red bell pepper diced, 1 tsp smoked paprika, 1/2 tsp cumin, and 1/4 tsp cayenne pepper, and cook for 1 minute until aromatic.
- Step 3: Add 1 can (15 oz) diced tomatoes (with juice), 1 can (15 oz) black beans drained and rinsed, 1 cup vegetable broth, and 1 cup corn kernels. Bring to a simmer and cook for 10 minutes.
- Step 4: Stir in 2 cups chopped kale and cook for 5-7 minutes until kale is wilted. Season with salt and black pepper to taste.
- Step 5: Remove from heat and stir in 1/4 cup chopped cilantro.
